The Chapada Diamantina Region
The name means “Diamond Plateau,” a nod to the gems once mined among these peaks. Today, the treasure is what grows there. Waterfalls and dramatic mesas draw travelers here from around the world; coffee lovers have their own reason to visit. While most Brazilian coffee comes from rolling farmland, Chapada Diamantina coffee grows on high mountain plateaus, where cooler temperatures slow ripening and concentrate flavor. Meanwhile, the mineral-rich soils and generous rainfall give the cup its unusual clarity. In short, this region breaks every rule of what Brazilian coffee is supposed to taste like — in the best way.
What’s in the Cup
Expect maple sweetness and soft vanilla up front, then a twist of lime that keeps everything bright and lively. The cup is clean and complex, with a crisp acidity rare in Brazilian coffees. Consequently, this one rewards careful brewing: try it as a pour-over to showcase its clarity, or as drip for a sweeter, rounder profile. It also makes a vivid iced coffee. For filter methods, start with a 1:16 ratio and adjust to taste.
