About Fazenda Joia Rara

The farm lies in the Cerrado, Brazil’s first Denomination of Origin coffee region, where rainy summers and long, dry winters create ideal ripening conditions. The Barbosa name carries weight in Brazilian specialty coffee, and Sérgio represents its next chapter — curious, exacting, and unafraid to experiment. For this lot, he grew Topazio, a Brazilian cultivar known for its sweetness and uniform ripening. Then came the signature move: a controlled 48-hour fermentation before drying. The cherries dry whole afterward, so the fruit’s slow fermentation keeps building flavor inside the bean. As a result, the cup gains vibrant fruit intensity without losing its clean, polished finish.

What’s in the Cup

Rich milk chocolate leads. Next, vibrant red fruit arrives, reminiscent of ripe cherry. Finally, juicy mango brightens the top notes. The body is silky, the sweetness comes in layers, and the finish stays clean. Consequently, this coffee shines as a pour-over, where the fruit unfolds sip by sip. It also makes a chocolate-forward espresso with a fruity twist. Iced, the mango note steals the show. For filter brewing, start with a 1:16 ratio and adjust to taste.
