Fazenda Paredão took First Place in the Fermented Category at the Cerrado Award, scoring an outstanding 90.52 points. The lot was produced by Carla da Silva Oliveira. It also highlights the precision and innovation coming out of the Bioma Café network, well known for numerous quality awards — including multiple Cup of Excellence championships. It is one of the strongest lots we have ever offered from the region.
About Fazenda Paredão
The farm sits in the Cerrado Mineiro, Brazil’s first Denomination of Origin coffee region. For this lot, Carla grew Yellow Catuai 2SL, a cultivar prized for its sweetness. Then she applied a carefully controlled anaerobic fermentation. The cherries ferment in sealed, oxygen-free tanks, which builds structure and complexity without overwhelming the profile. That restraint is the hard part. In fact, it is exactly what separates award winners from science experiments — and Fazenda Paredão lands firmly in the first camp.
What’s in the Cup
Floral aromatics open the cup. Next comes a parade of tropical fruit: mango, pineapple, and passion fruit, all supported by honey sweetness. Meanwhile, a creamy body and balanced citric acidity keep everything composed. The finish is sweet, long, and clean. Consequently, this coffee is spectacular as a pour-over, where the florals and fruit get room to shine. It also makes a vivid, honeyed espresso. Iced, the passion fruit turns positively electric. For filter brewing, start with a 1:16 ratio and adjust to taste.
