The Montanhas do Espírito Santo Region
Espírito Santo produces roughly 30% of Brazil’s total coffee output, yet its mountain arabicas remain a well-kept secret. The Caparaó range — home to some of Brazil’s highest peaks — rises along the state’s western border. Here, smallholder families farm steep slopes wrapped in Atlantic Forest. That combination of altitude, forest, and family farming is rare even in Brazil, and it gives these coffees a personality all their own. Meanwhile, quality-focused growers often employ pulped natural processing: the skin comes off the cherry, but the beans dry coated in sweet mucilage. As a result, the cups combine a natural’s sweetness with a washed coffee’s clarity and lift.
What’s in the Cup
Brown sugar sweetness anchors the cup. Then apricot brings soft stone fruit, and jasmine adds a delicate floral lift. Citrus brightness runs underneath, and the aftertaste is long and sweet. In short, this is the most elegant cup in our regional lineup. It rewards a careful pour-over, where the florals bloom, and it makes a lovely light-bodied drip. For filter brewing, start with a 1:16 ratio and adjust to taste.
