Grower Deyvid Oliveira Leandro — one of Brazil’s top coffee makers — recently won the Best of Cerrado, taking first place in the Induced Fermentation category. The winning lot then fetched $101 per pound at auction. Bags like this explain why competition judges keep saying his name. The farm’s name means “the fox’s den,” and it sits in Campos Altos, in the Cerrado Mineiro. Deyvid grows Yellow Bourbon here, an heirloom cultivar treasured for its elegant sweetness. Then comes his signature: a 72-hour induced fermentation before the cherries dry whole in the sun. That long, controlled fermentation builds bold fruit flavors that ordinary naturals never reach. Consequently, this cup breaks the Cerrado mold. Unlike the region’s standard chocolatey, nutty profile, Toca da Raposa is bright and lively from the first sip.
