The basics
THE GRIND
A burr grinder is best as blade grinders often result in inconsistent particle size.
Grind only what you need for each brew, and grind immediately prior to brewing to ensure freshness.
WATER
Use clean-tasting filtered water: bad water makes bad coffee.
Do not use distilled water as particles in the water are necessary to adhere to and extract the coffee solubles.
Brewing temperature should be 195º to 205º F.
CLEANLINESS
Coffee oils can remain on equipment and become rancid over time. Clean your equipment regularly!
