Fazenda Capadócia
Augusto Borges Ferreira
Augusto Borges Ferreira of APAS is one of the youngest producers we have worked with, but whatever he may lack in experience, he more than makes up for in passion and ambition.
This year Augusto joined our Selective Harvest Project and immediately invested his proceeds in a color sorter, which he used to increase the quality of his already-excellent coffee. The sorter uses color sensing technology to identify under or overripe coffee fruit, then physically separates them from the ripe coffee. Augusto’s new sorting technology provides a safeguard to an already carefully curated selection of ripe coffee fruit during harvest, ensuring that his best gets even better.
Augusto’s passion for coffee shows through his interest in the entire supply chain of the business. While many growers around the world rarely have the opportunity to drink their own product, Augusto starts his morning with a pourover made from some of his best beans.
Augusto’s work demonstrates how emphasizing rigorous quality control standards in both harvest and post-harvest processes can lead to excellent coffee.
